Most recipes that call for 'wrap in foil, then
steam' will work fine if you use cheesecloth or
another porous cloth to wrap it in, then steam
(over water, not submerged in water).
Use string to tie the bundle(s) closed.

Glamorgan Sausages

4 oz soy Cheddar cheeze, grated
4 oz fresh breadcrumbs
1 small onion, peeled and finely chopped
1 tsp dry mustard power
1 Tbs chopped parsley
Pinch of thyme
Salt and pepper
Ener-G Egg Replacer for 4 eggs, prepared and beaten
Dry breadcrumbs for coating
Oil for frying

Divide the prepared Ener-G into two bowls.
In one bowl, beat Ener-G, and add mustard, parsley, thyme, and seasonings.
In a third bowl, mix together the cheeze, fresh breadcrumbs, and onion.
Combine the Ener-G-mustard mixture with the cheeze-breadcrumb mixture.
With floured hands, form the mixture into approximately 10 sausage-shaped rolls.
Dip the sausages into the remaining Ener-G, then coat them with the dry breadcrumbs.
Fry in oil until golden brown.
Drain well on paper towels.

Serve with a crunchy green salad, etc.

Italian Sausage

1 (12 oz) package Gimme Lean Sausage Flavor, or 12 oz other vegan sausage
1/2 lb waterpack firm or extra-firm Tofu, fresh
1/4 cup fine dry breadcrumbs
1 tsp garlic granules or powder
1 tsp natural sugar
1/8 tsp pepper
1/8 tsp cayenne
Dash salt
1 tsp Italian Seasonings (found in supermarket spice rack)
1/4 cup grated vegetarian Parmesan
Oil

Mash Tofu by hand into tiny bits.
Mix in Gimme Lean until well-blended.
Mix in all remaining ingredients except oil.
Form into sausage shapes or patties.
Use immediately, or wrap and freeze (or some of each).

To use:
Cook in a little oil until heated through and browned on all sides.
Be sure to use at least SOME oil, for that authentic "mouthfeel".

Use in recipes, as desired.

TVP Italian Sausage

This mixture can be sausages, burgers, or meetballs.


1 cup TVP
1 cup water
2 tsps vegetarian "beef" or vegetable flavor bouillon powder
1/4 tsp sage
1/4 tsp thyme
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp oregano
1/4 tsp basil
1/8 tsp cayenne (opt)
1 tsp sugar or equivalent
1/4 Soy Parmesan (optional)
1/2 lb fresh (not frozen) firm waterpack Tofu, mashed
Breadcrumbs

Heat water to boiling. Turn off heat.
Mix in bouillon, spices, and sugar.
Mix in TVP, and let stand 30 minutes.
Put soaked TVP in processor, and process to a thick paste.
Put TVP paste into a bowl.
By hand, mix in mashed Tofu.
Mix in cheese, if used.
By hand, mix in breadcrumbs, using just enough to obtain a mixture
that can be formed into patties or sausages that will stay together
(neither too wet nor too dry).
Form mixture into desired shapes (patties, sausages, balls, etc).
Cook immediately, or refrigerate or freeze for later use.

To cook:
Heat gently in a little oil or pan spray, until browned.
Or, spray with pan spray and bake on medium heat until browned.


NOTE:
Adjust quantities of spices to your taste.
