This is my vegan recipe for mashed potatoes. I've been making them for years and years. My non-vegetarian daughter even makes them for her family, because they are that good.

2 pounds Yukon gold potatoes (the variety is important for colour & starch content), washed & cut into 1" pieces
6 cloves garlic, peeled but left whole
salt & white pepper to taste

Put potatoes and garlic in a large pot, and cover with water. Add about 1tsp of salt. Put the lid on the pot. Put on high heat, when pot comes to a boil, turn the heat off, leave the pot on the stove, and let it sit for 15 minutes.

Reserve 1.5 cups of cooking liquid. Drain potatoes and garlic. Using an electric mixer, mash the potatoes and garlic together. Add cooking liquid as needed (don't add the whole thing, you probably won't need it). Adjust the salt and add some white pepper.

You can substitute a mix of 1 pound Yukon gold potatoes & 1 pound sweet potatoes for the full 2 pound of Yukon gold potatoes in the above recipe. It will be sweet and buttery. The garlic will not over power the dish because it mellows out when boiled.

I also like to sprinkle a little paprika on top of the mash potato dish (a trick passed down from my grandmother).
