Hey girl I found this recipe and I have some q's for you? The recipe is from Weekly Vegan Menu http://weeklyveganmenu.blogspot.com/search/label/Pat%27s%20K ing%20of%20Steak Steak Seitan Ingredients: 2 ¼ cups cold vegetable stock 2 Tablespoons oil 2 Tablespoons tamari 1 teaspoon salt 2 cups vital wheat gluten 3 cups vegetables stock ¾ cup steak sauce In a large bowl, combine the 2 1/4 cups vegetable stock, oil, tamari and salt. Add the vital wheat gluten and using only your hands, mix the whole thing together until it becomes a homogeneous mass. Do this quickly. Pat the gluten down and cover the bowl. If it looks like you used too much liquid, it is okay. The gluten over the sitting time will give off any unnecessary liquid. Allow the gluten to sit in the fridge for 6 hours (this has been changed from 24). When you are ready to cook the gluten, bring the other 3 cups of stock and steak sauce to a boil in a medium sauce pan. Pour the liquid into a glass 9X13 baking dish. Carefully pour off any liquid that has accumulated in the bowl around the gluten. Place the gluten on a cutting board and divide the mass into 8 pieces. On a clean, dry counter (with lots of space), using a rolling pin, roll the gluten pieces into a thin, thin, piece of gluten. It is NOT necessary to roll in only one direction. It will be huge! Remove it from the counter (at this point it’ll spring back to a smaller size) and gently place it into the waiting, hot liquid in the baking dish. Repeat with all of the gluten pieces. Cover the dish with an aluminum foil (very securely) and bake the gluten in a 230 degree oven for 2 hours. (No need to preheat.) When done, allow the gluten to cool in the broth for an hour before refrigerating. Use this seitan in a steak recipe from Vegan Aide. It needs to be treated before becoming a “true” steak ;)
Okay so my question about this is....Can I just make this with seitan from scratch (flour and water, washed to make seitan)and if so would you add anything to the broth to make it beefier? I don't have any beef broth powder but I do have Marmite, Liquid smoke, vegan Worcestershire sauce....Hold the phone, just found some vegan beef broth powder SCORE. I am making this for Philly Steak Cheese sammiches...I am not putting the au jus on mine since she calls for Brewer's Yeast which I do not have. Or do you have a recipe that doesn't use that? I do have Nutritional Yeast.
