I make my own seitan from scratch using water and whole wheat flour then cooking in a seasoned broth (carrot, onion, garlic, celery, water and soy sauce). I want to know how to either season the broth to make it taste like beef and chicken or how to seasoning it once it is done cooking to taste like beef and chicken? Thank you so much. I make the vital wheat gluten Tofu Kofu too but I find this is cheaper to make it this way.
