If your vegan turkey is made of tofu or gluten, baste it frequently with veg "turkey" broth while baking, and it will form a "skin" on its own. Be sure to use a medium-low heat to prevent the inside from becoming too dry. You could also put a sheet of (bought) puff pastry (or 2 - 3 sheets of phyllo dough) over the "turkey" when it is almost done baking, and bake until pastry is lightly browned and done.
