Feel free to tinker with the ingredients to suit your taste! :) --- Black Bean Soup 1 tsp margarine or oil 1 can black beans, including liquid 3 or 4 Tbs chopped onion 1 bell pepper, seeded and diced 1/2 cup Ro-Tel Tomatoes & Chilies, including liquid --(for non-spicy, use plain diced canned tomatoes) 1 garlic clove, minced 3/4 cup coconut milk (low-fat, if available) --(or other nondairy milk, such as almond or rice) Hot sauce Salt Heat margarine or oil in frying pan over medium heat. Add onion, and saute` until it begins to soften. Add garlic, and saute` about 1 minute. Add diced pepper, and saute` 3 minutes. Add tomatoes, beans, and coconut milk. Dilute with water to desired consistency. Heat, stirring frequently, until all is hot. Add hot sauce and salt to taste.
