Sweet Potato Sauce
2 large sweet potatoes, peeled and diced
1 Tbs maple syrup, agave syrup, or rice syrup
1/4 cup raisins
1/4 cup coconut milk
1 Tbs coconut oil (optional)
Salt, pepper, and nutmeg (to taste)
Put sweet potato dices in a saucepan.
Add hot water to cover halfway.
Bring to boil.
Turn down to simmer.
Cover, and simmer until sweet potatoes are tender.
Drain, reserving liquid.
Put dices into processor.
Add remaining ingredients.
Process, adding reserved water a little at a time,
to desired consistency.
(Mixture will thicken upon standing or cooling.)
Serve over whatever you want to serve it over.
VARIATION:
Use winter squash or pumpkin.
NOTE:
Most of what are labeled "yams" are actually
sweet potatoes.
