There are some good pancake mixes available,
but if you want to make your own, try this:

Pancake Mix

4 cups flour (try a mixture of all-purpose & whole wheat)
2 cups powdered milk (soy, rice, coconut, etc)
2 Tbs baking powder
2 Tbs natural sugar
1/2 tsp cinnamon
1 & 1/2 tsp salt
1/4 cup Ener-G Egg Replacer, dry (optional)

Mix all in container with tight-fitting lid.

To use:

In a bowl, put a portion of mix.
Stir in 'milk or water, until you get a medium-thick batter.
Do not overbeat mixture, or pancakes will be tough.

Heat griddle or pan until a few drops of water "dance" on it.
(If they sizzle, it is too hot. If they sit, it is not hot enough.)
Cook pancakes until golden, turning once.
Serve with margarine, syrup, fruit, or however you like.

Self-Rising Flour

4 cups flour (white, whole wheat, or a mixture)
2 Tbs baking powder
1 tsp salt

Mix all ingredients well.
Store in an airtight container.
