1/3 cup egg-free pancake mix or self-rising flour
1 Tbs nutritional yeast (not baking yeast)
1/8 tsp turmeric
Few dashes of salt
Pinch of black salt (optional, adds eggy flavor)
1/8 tsp guar gum (optional, adds eggy consistency)
Nondairy 'milk, as needed
Mix all except 'milk in a small bowl.
Stir in 'milk gradually, until you get a
medium-thick, pancake-batter consistency.
Drop by 2 Tbs portions in a sprayed skillet,
and cook as you would pancakes.
When cooled, cut into strips.
Use as garnish for stir-frys, noodles, etc.
Note: Can also be added by spoonfuls
directly (uncooked) to a stir-fry dish,
and "scrambled" in.
