Corn Chowder 4 cups vegetable broth 2 Tbs cornstarch 2 cups corn kernels (fresh, frozen, or canned OK) 1 cup cooked potato cubes (small dice) 1 tsp onion granules or powder 1/2 tsp garlic granules or powder 1/2 bell pepper, minced (optional) 1 tsp margarine (optional) 1/2 cup 'milk powder (soymilk powder, or rice milk powder, or coconut milk powder) Salt and white pepper to taste Chopped scallions for garnish (optional) Mix all except soymilk powder in saucepan. Bring to boil, stirring frequently. Turn to simmer, and stir in soymilk powder. Simmer, stirring frequently, for 10 minutes. Add more broth, if needed, for a thinner soup. Serve hot, garnished with chopped scallions (opt). ---- VARIATIONS: CornTato Chowder Use 1 cup corn, and 2 cups potato cubes. --- Veggie Chowder Add any other chopped vegetables you like, just before the 10 minute simmer.
