Subject:         Ranch Dressing

Fresh Ranch Dressing

1 clove garlic, peeled
2 - 3 pinches salt
3/4 cup vegan "buttermilk"*
2 - 3 Tbs lime juice
1 Tbs minced fresh cilantro or parsley
1 Tbs snipped fresh chives
Salt to taste
Black pepper to taste

Mash together the garlic clove and salt until a paste is formed.
Put into a small bowl, or jar with a tight-fitting lid.
Add "buttermilk", lime juice, cilantro or parsley, and chives.
Whisk (or shake) until well-blended.
Add salt and pepper to taste.
Use immediately, or cover and refrigerate.

Makes about 1 cup.


NOTE:
For a thicker dressing,
add 1/3 - 1/2 cup vegan mayo or vegan sour cream.

*Vegan "Buttermilk"

1/4 cup soy yogurt
1/2 cup water

Mix thoroughly.
