Lemon Cake 1 & 1/2 cups flour 3/4 cup sugar 2 tsps baking powder 1/4 tsp salt 3/4 cup soymilk, or other 'milk (almond, coconut, etc) 1 & 1/2 tsps lemon extract 1/2 tsp vanilla 1 tsp grated lemon zest (yellow part of lemon peel 1/4 cup melted margarine or oil Ener-G Egg Replacer for 1 egg, prepared as per package directions* Preheat oven to 350 F. Grease a 9" x 9" cake pan. In large bowl, mix together flour, sugar, baking powder, and salt. Combine remaining ingredients, and add to flour mixture. Beat by hand for 1 minute. Bake for 30 minutes, or until a toothpick inserted in center of cake comes out dry. Makes one cake layer. Multiply amounts as needed! Frost with lemon frosting or vanilla frosting. *If Ener-G is not available, use 2 tsps tapioca flour, soy flour, or cornstarch, mixed with 2 Tbs water
