For cakes, you can use white wheat flour, which is not the same as standard 'white' flour, but is a lighter-colored whole wheat flour. Make a cake as you usually do, using the above flour substitution, and sweeten the cake with all-fruit preserves in the same proportion as whatever sweetener is called for in the recipe. For topping, you can add some shavings of unsweetened or fruit-sweetened chocolate (available in health food stores), and heat gently to melt.
