Most cakes rely on baking powder, baking soda, or eggs for leavening. Without them, cakes are not usually light and fluffy. Coffee cakes are often made with yeast. --- What is it in baking soda/powder that you are trying to avoid? If it is aluminum or corn, you can find baking powders that are aluminum-free and corn-free.
