Subject:         barley soup (and not a mushroom for miles)

Barley Bean Soup

12 oz veggie burger crumbles (or crumbled veggie burgers)
1 tsp cooking oil
2 quarts water
8 tsps vegetable bouillon powder
1 cup potatoes, peeled and sliced
1 can stewed tomatoes
1 cup diced celery
1 small onion, peeled and chopped
1/2 cup barley
1/2 cup black-eyed peas, rinsed
2 bay leaves (opt)
Salt and pepper to taste

Heat oil in a large kettle.
Brown "burger" in oil.
Add all remaining ingredients.
Simmer gently for 1 & 1/2 hours.
Remove and discard bay leaves.

Serve with fresh bread.


VARIATIONS:
Omit veggie burger.
Use different vegetables.
Add crumbled tofu (plain or browned).
Season with hot peppers, curry spices, etc.
