When I make barley soup, it's usually mushroom/barley soup, but I'd like to try something different. I have about a cup of barley (it's near the end of winter so I'm not planning to buy more right away). I'm interested in any barley soup recipes you can come up with that don't use mushrooms.
Right now, some of the other things I have at home are tomatoes, carrots, zucchini, and scallions, but I can also buy other ingredients as needed. Thanks.
