The first question I have to ask is:
Do you want this to be a meal of all
veggies, fruit, etc, or are you willing
to use meat analogs? (Some people won't.)
If you are willing to use them, you can take
almost any Russian recipe that uses meat,
and substitute one of the great meat analogs
that are available.
For instance: Veg 'meatballs' can be
served in gravy over noodles, or added
to soups and stews, along with lots
of veggies.

Assorted suggestions follow.
Mix & match as desired.

Use mushrooms for appetizers, either roasted,
or pureed (mushroom pate`), or even pickled.
You can serve the roasted ones with a little 'meatball' in the middle of each!

Serve a hearty vegetable soup.

Serve boiled potatoes, with veg'n "sour cream".
---
Serve a platter of veg 'cold cuts'.
(Yves and LightLife are my favorites.)

Russian Carrot Salad
Mix to taste:
Shredded carrots
Toasted almond flakes
Mayo (use Vegenaise)
Garlic (roasted, peeled, and minced)

Borscht (Beet Soup)
Use any recipe

Cucumber Salad
Cucumber, peeled and sliced
Onion, peeled and sliced into rings
Beets, sliced (optional)
Olives (optional)
Mix all to taste.
Serve with vinaigrette dressing.

"Beef" Stroganoff
Use veggie burgers (like Boca, etc),
cut into strips.
