TVP Sausage
This mixture can be sausages, burgers, or meetballs.
1 cup TVP
1 cup water
2 tsps bouillon powder, veg'n "beef" or vegetable flavor
1/4 tsp sage
1/4 tsp thyme
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp cayenne (opt)
1 tsp sugar or equivalent
1/2 lb fresh (not frozen) firm waterpack Tofu, mashed
Breadcrumbs
Heat water to boiling. Turn off heat.
Mix in bouillon, spices, and sugar.
Mix in TVP, and let stand 30 minutes.
Put soaked TVP in processor, and process to a thick paste.
Put TVP paste into a bowl.
By hand, mix in mashed Tofu.
By hand, mix in breadcrumbs, using just enough to obtain a mixture
that can be formed into patties or sausages that will stay together
(neither too wet nor too dry).
Form mixture into desired shapes (patties, sausages, balls, etc).
Cook immediately, or refrigerate or freeze for later use.
To cook:
Heat gently in a little oil or pan spray, until browned.
Or, spray with pan spray and bake on medium heat until browned.
NOTE:
Adjust quantities of spices to your taste.

Tofu Sausage
1 lb fresh firm waterpack Tofu, very well-drained, and mashed
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp soy sauce
Dash Liquid Smoke
1/2 tsp thyme
1/4 tsp sage
Dash black pepper
1 cup fine bread crumbs (approximately -- see recipe)
Oil
Mix all ingredients together, except breadcrumbs and oil.
Mix in breadcrumbs, adding just enough crumbs to obtain a mixture
that can be formed into patties that will stay together well (not too wet or too dry).
Form mixture into 1/2" patties.
Heat a little oil in a frying pan.
Brown patties on both sides.
Continue cooking over medium heat, until heated through.
Alternate Cooking Method:
Preheat oven to 350 F.
Place patties on greased baking sheet.
Spray patties with pan spray.
Bake 5 minutes.
Turn carefully, and bake 5 minutes more, or until done to desired consistency.
Serve.
