Split Pea Soup 1 cup split peas, picked over and rinsed 4 cups vegetable broth (or 4 cups water + 4 bouillon cubes) 1 cup diced carrots 2 tomatoes, chopped 1/2 tsp sugar (or equivalent) 1/4 cup veg bakon bits (optional) Salt and pepper Hot sauce (optional) Put peas and broth (or water + bouillon cubes) into a large kettle. Bring to boil, and boil 5 minutes. Add vegetables and sugar. Bring to boil again, turn down to simmer. Cover, and cook 45 - 60 minutes, or until beans are tender, stirring occasionally. Add bakon bits (optional), and heat through. Season with salt and pepper to taste. Add hot sauce at table. Optional Seasonings:
1 - 3 drops Liquid Smoke (add during last few minutes of cooking) 1/4 - 1/2 tsp curry powder (add during last 15 minutes of cooking) Croutons (add as garnish) Chopped cilantro or chopped scallions (add as garnish)
