"Drained" usually means just drain off as much water as possible from the packaged tofu. Otherwise, it would usually say "drained and pressed" if more vigorous water-removal is intended. Draining and then pressing are good ideas if the tofu is meant to soak up a lot of broth or other liquid in the recipe.
