I recommend rice with a yummy (vegan) cheese sauce. You can get these sauce recipes (which I use frequently and LOVE!!) in a paperback cookbook called "The Ultimate UnCheese Cookbook" by Jo Stepanick. Here is a handy recipe for an instant sauce (I keep a big jar of this in the cupboard, and then make some up as a I need it-- fast, convenient, and VERY satsifying). To mix up 4 cups of the instant mix:
2 cups flour (any kind, doesn't have to be wheat)
2 cups nutritional yeast (buy at Whole Foods)
4 t salt
2 t paprika (I use "smokey paprika")
1 t garlic powder
1 t dry mustard
Put all that in a jar and shake it up to mix it up. To use it, to make 1 cup of vegan cheese sauce,
put 1/2 cup of the mix in a small sauce pan
whisk in 1 cup of water, or any plain nondairy milk (I use almond milk for this)
While some people also add 1 t vegetable oil, I don't recommend it for a stroke patient. He clearly has vascular disease, so no oil of any kind should be used.
Also, see the EXCELLENT book (with great recipes!!) called "Prevent and Reverse Heart Disease" by Dr. Caldwell Esselstyn Jr, from the Cleveland Clinic. Everything in it applies to a stroke patient.
