Crispy Crackers 1 Tbs salt (less, if you must) 1 tsp pepper (up to 1 Tbs if you like pepper!) 1/4 cup vegetable oil 2 cups vegetable broth or tomato juice 7 cups bread flour In a large bowl, mix the peppercorns and salt. Add the rest of the ingredients, except for the flour. Mix until thoroughly blended. Work in the flour 1 cup at a time. (If you are mixing by hand, you may not be able to work in all the flour.) Wrap the dough in plastic wrap, and chill for 1 hour. Preheat oven to 350 F. Roll out the dough as thin as possible. Put dough on parchment-lined baking sheets, and cut into squares. Bake approximately 8 - 10 minutes. Watch carefully that they don't burn! The crackers will be very crispy when they are done. VARIATIONS: Use mixtures of different flours. Use different vegetable juices. Use different seasonings.
