Cottage Cheeze 1 box silken tofu (firm, not extra-firm) 1/4 cup almond milk, rice milk, or coconut milk Pinch of sugar or other sweetener Pinch of salt (optional) Put silken tofu into a large bowl. With a fork, break into curd-sized bits. Gently mix in 'milk, sweetener, and salt. Be careful not to break the 'curds' too much. Put into a container with lid. Keep refrigerated. Stir gently before each use. Use as cottage cheese, topped with fruit, etc. NOTE: If you can't get boxed silken tofu, use fresh silken waterpacked tofu, or medium waterpacked tofu. Be sure to drain very well before using in this recipe.
