Here is a stovetop method. Adjust as needed for your crockpot. --- Pulled Tofu "Pork" 1 lb firm waterpack tofu, drained 3 cups water 4 packets Goya "ham" seasoning (it's vegan) 1/4 teaspoon Liquid Smoke 1/4 cup sugar or other sweetener 1/8 tsp onion powder Pinch of garlic powder 1 Tbs BBQ sauce or ketchup Put drained tofu in ziplock bag, and freeze for 2 days. Defrost. Gently press between palms to expel water. Put tofu in saucepan with remaining ingredients. Bring to boil. Turn down heat to medium simmer. Simmer, covered, 30 minutes, stirring and turning occasionally. [Do not let liquid cook away. Add a bit more water, if needed.] Remove tofu to a plate, letting sauce continue to simmer gently. Using two forks, pull tofu into shreds.* Return tofu shreds to simmering sauce. Simmer gently 15 minutes, stirring often. [Do not let liquid cook away. Add a bit more water, if needed.] Drain liquid, if any. Arrange "pork" shreds on a serving platter. Serve "pork" on buns, or over rice, with beans, etc. - *If you have trouble shredding the tofu, use a knife, and cut it into shreds that way.
