"Ham" Salad

1 package vegan "ham" slices (Yves, LightLife, etc)
1 cup minced red & green bell pepper
1/4 cup shredded carrot (optional)
1/4 cup chopped green olives (optional)
1 medium tomato, diced (seeds removed)
Veganaise, as needed

Dice "ham" into small pieces.
Mix with remaining ingredients,
adding Veganaise to desired consistency.
(Some like it moist, others less so.)
Keep refrigerated until serving time.

Recipe can be doubled, tripled, etc.
