Subject:         Deb: need some Seitan stuff....

Deb,
I would like to make several batches of Seitan. I have a couple of basic recipes that I will be using. What I need are some marinades or rubs that I can put together for sayyy, roast NOT-beef, Seitan breast for like parmigiana, um, maybe even some Pulled Seitan. just different flavorings for various dishes. Think you can help me out? Sure would appreciate it.
Oh! yea and a question: should I freeze the basic seitan after initial cooking or after the marinade/rug?? and how long can it stay frozen?
