Subject:         Look... Potato-Leek

Potato-Leek Soup

3 large potatoes, washed
1 cup diced leeks
2 cups soymilk
1 cup soy creamer
1 Tbs margarine
Salt and pepper

Bring 4 cups water to a boil.
Add potatoes, and cook on medium heat for 10 minutes.
Remove, cool, peel, and dice.
Return potatoes to pot, and cook until almost tender.
Add diced leeks, and simmer until potatoes are tender.
Mash potatoes and leeks together in pot.
Add soymilk, creamer, and margarine, and mix well.
Heat gently until just hot; do not boil.
Add salt and pepper to taste.
Serve hot.
