Subject:         Seitan aftertaste

My seitan made with vital wheat gluten always has a strange aftertaste - almost chemical tasting. I have enjoyed seitan at restaurants without the aftertaste. Any idea what might cause that? The recipe is similar to the ones I see here. Thanks
