have been cooking them for so many centuries, there are inevitably many suggestions and much lore about the best way to cook them. I have not heard of the vinegar suggestion, but I suspect that whatever supposed benefit would be so slight as to not be worth the extra bother. Perhaps the most widely circulated bit of lore is that salt should not be added to the bean pot until they are completely done, because the beans will never get soft. That was tested by some PBS show and found to have no effect one way or the other as to the ultimate softness of the beans.
