Seitan
4 cups instant gluten flour (aka vital wheat gluten)
1/2 cup whole wheat flour
1/2 cup unbleached white flour
1/2 cup Minute tapioca (or grind tapioca pearls to powder)
1/4 cup nutritional yeast
3 Tbs veg'n 'chicken' or 'beef' bouillon powder
1 Tbs garlic powder
1/4 cup soy sauce
3 & 1/4 cups cold water
Mix all dry ingredients together.
Add all at once to the liquid ingredients, and mix quickly.
Knead until smooth.
Shape into two rolls. Put each half in a plastic bag (or other
freezable wrapping).
Use immediately, or freeze -- or use one and freeze the other.
To use frozen gluten, defrost until you can cut it into pieces.
Cook gluten in Cooking Broth (recipe follows).

Cooking Broth for Gluten
8 cups Water
1 large onion, peeled and chopped
1 Tbs chopped fresh garlic (or 1 tsp dried)
1/3 cup soy sauce
1/4 cup veg'n 'chicken' or 'beef' bouillon powder
Bring broth to a boil.
Cut up gluten to desired shapes (sliced, diced, etc).
Add gluten to broth.
Bring to boil again, then immediately turn to medium simmer.
Partly cover, and simmer until pieces are cooked throughout.
Use broth in soups, stews, gravies, etc.
