Subject:         gluten free, vegan homemade bread

Gluten-Free Bread

3 cups gluten-free flour mixture (buy or make)
3 Tbs veg oil
1 tsp salt
1 tsp sugar
1/4 tsp cinnamon
1 Tbs gluten-free baking powder
Non-dairy milk (as needed)

Grease a loaf pan or other pan.
Preheat oven to 350 F.

Put all except 'milk into a bowl. Mix well.
Add 'milk to get a thick, pancake-batter-like
consistency. Do not overmix.

Pour mixture into prepared pan.
Bake in preheated oven until a thin knife
inserted into center of bread comes out
clean and dry (no batter sticks to it).
(Start checking at 25 minutes, and every
7 - 10 minutes thereafter.)

Let cool completely for best cutting results.

Cut into thick slices or squares.
Spread with marg, jam, etc.
Serve.

2 parts white rice flour
...(can sub one-fourth part brown rice flour)
2/3 part potato starch
flour 1/3 part tapioca flour
