Chop the dates (no pits, please), and measure in a measuring cup (don't press down much). Use in place of date sugar. --- Cooked pumpkin is a fine sub for canned. Use a scale to get the same amount as canned. --- Drop from a larger spoon for bigger cookies, and bake a few minutes longer (5 - 10 mins more). Don't overbake.
