Marinara Sauce I

2 Tbs olive oil
2 cloves garlic, peeled and minced
1 small onion, peeled and chopped
1 16-oz can tomatoes, coarsely chopped (or 1 lb fresh, chopped)
1 6-oz can tomato paste
1 Tbs sugar (optional)
2 tsp minced fresh basil
1 tsp salt

In a medium pan, heat oil over medium heat.
Add onion and garlic, and saute` until tender, about 5 minutes.
Stir in tomatoes and their liquid, tomato paste, sugar, basil, and salt.
Reduce heat to low.
Cover. Simmer, stirring often, for about 20 minutes, or until thickened.

Makes 3 cups sauce.

Marinara Sauce II

1 28-oz can crushed tomatoes (or equivalent fresh)
2 cloves garlic, peeled and minced
2 Tbs olive oil
1/2 cup red wine, or water
1 Tbs chopped fresh parsley
2 tsp chopped fresh basil
2 tsp dried oregano
Salt and pepper to taste

In a saucepan, heat olive oil over medium-low heat.
Add garlic, and saute` gently for about 2 minutes.
Add the crushed tomatoes.
Stir gently, and add wine or water, and herbs.
Cover, and let simmer for 10 minutes, stirring often.
Add salt and pepper to taste.
Simmer for another 10 minutes, and serve.

Marinara Sauce (fat-free)

2 cloves garlic, peeled and minced
1 small onion, peeled and chopped
1 16-oz can tomatoes, coarsely chopped (or 1 lb fresh, chopped)
1 6-oz can tomato paste
1 tsp sugar (optional)
2 tsp minced fresh basil
1 tsp salt

Spray a large, nonstick pan with no-stick spray.
Add onion and garlic, and saute` until tender, about 5 minutes.
Stir in tomatoes and their liquid, tomato paste, sugar, basil, and salt.
Reduce heat to low.
Cover. Simmer, stirring often, for about 20 minutes, or until thickened.

Makes 3 cups sauce.

2 Tbs olive oil
3 cloves garlic, peeled and minced
2 humongous cans tomato puree
1/2 cup red wine, or water
1 Tbs chopped fresh parsley (or 1 tsp dried)
1 Tbs chopped fresh basil (or 1 tsp dried)
3 Tbs chopped fresh oregano (or 1 Tbs dried)
1/2 tsp pepper
Salt to taste

In a saucepan, heat olive oil over medium-low heat.
Add garlic, and saute` gently for about 2 minutes.
Add the tomato puree.
Stir gently, and add wine or water, and herbs.
Cover, and let simmer for 10 minutes, stirring often.
Add salt and pepper to taste.
Simmer for another 5 minutes, and serve.
