I just made the Almond Feta with Herb Oil from Vegetarian Times yesterday. It was so good! Mine even came out crumbly like dairy feta. I put it in a Greek-style pasta salad.

I also love the Cashew Ricotta in Veganomicon (I think it's in Vegan with a Vengeance, too.) It's really good in lasagna and stuffed pasta shells.

Both of these are recipes I wouldn't hesitate to serve omnivores who aren't used to alternative ingredients.
