Mushroom Broth, and What to Do With It
Saute` sliced or chopped mushrooms in a little oil or pan spray
until lightly browned.
(The mushrooms will shrink as they cook.)
When lightly browned, measure the mushrooms,
and add 3 times the volume vegetable broth (homemade, canned, etc)
(In other words, 1 part mushrooms to 3 parts liquid).
Bring to boil, then turn to medium simmer.
Simmer about 10 minutes, stirring often.
Store mushroom broth in fridge.

Some Uses:
Use as a base for soups and stews.
Thicken with cornstarch or other thickener,
to make a rich gravy. Great on potatoes,
rice, in pot pies, etc.
