Deborah: Wonderful Recipes!! Because I eat a vegan diet with no extracted oils, I was happy to see your low fat option. I would like to offer two “options” to consider: 1. Add one Table spoon of Lemon Juice to the Pesto. I like the little zing it adds. 2. Mix a portion of the prepared Pesto with silken Tofu to create a creamy pesto sauce for pasta or potatoes.
