I have a seitan that I like to make, it is made from whole wheat flour. If I want to make this seitan taste "chick-ish", would I just simmer it in "chicken broth" and poultry seasonings, or would I(in addition to cooking it in the broth)knead in these seasonings at the end when I have seitan/gluten? I am not sure how to go about this.
