I like to use the oven to cook rice.
It can cook at the same time as other dishes
in the oven, and is almost effortless.
Oven-Baked Rice
2 cups brown rice
4 cups water or broth
2 tsps bouillon powder or mixed herbs (optional)
Mix together in a casserole dish that leaves
several inches above the level of the water.
Cover with foil or lid.
Bake at 350 F for 45 - 60 minutes, or
until water is absorbed and rice is tender
(Test at 40 minutes).
If water is absorbed before rice is done,
add a little more water and cook a few minutes more.
Let stand 5 minutes.
Fluff with a fork.
Add salt or other seasonings to taste.
Serve.
NOTE: If you use white rice, cook for
25 minutes, then test as above.
