Gluten-Free Cake Mix

2 & 1/4 cups rice flour
1/2 cup potato starch flour
1/2 cup tapioca flour
1 tsp baking soda
4 tsp baking powder
1 tsp salt
1 Tbs egg replacer (dry)
1 tsp xanthan gum
1/2 cup sugar

Mix together and store in an airtight container.
Makes 4 batches.

Cake:

To one cup of mix, add 2 eggs' worth of Ener-G,
2 Tbs veg oil, and 1 cup nondairy milk.
Add flavoring of your choice.
Spoon dough into a greased 8" round cake pan.
Bake in pre-heated 350 F oven for 20 - 25 minutes or until a toothpick or knife comes out dry.

Makes one 8" single layer round cake.

For chocolate cake, add 1/3 cup cocoa powder
and 1/4 tsp vanilla extract. Adjust liquid
as needed to obtain cake batter consistency.
