I cook bulgur wheat all the time and know that the cooking time varies with the size-type you buy. I usually buy the larger-grained bulgur. They all cook up rather quickly though. I am guessing the barley is the refined pearled barley and not the long cooking whole barley. But if I was cooking this, I would try the largest size of bulgar possible. Let us know how it turns out!
