Gluten-Free Flour Mixes
Gluten-Free Mix I
1/4 cup soy flour
1/4 cup tapioca flour
1/2 cup brown rice flour
Mix together. Equals 1 cup wheat flour.

Gluten-Free Mix II
3 cups white rice or brown rice flour
1 cup potato starch
1/2 cup tapioca flour
Mix together. 1 cup equals 1 cup wheat flour.

Gluten-Free Mix III
1/4 cup rice flour
1/4 cup tapioca flour
1/4 cup cornstarch
1/4 cup potato flour (not starch)
Mix together. 1 cup equals 1 cup wheat flour.

Gluten Free Plain Flour Mix 4
This recipe works best if measured by volume rather than weight.
Use the same measuring implement such as a teacup or mug
to measure each ingredient.
2 Measures White Rice Flour
1 & 1/2 Measures Potato Starch
1 Measure Cornflour
1/3 Measure Potato Flour
Place all the ingredients in a large mixing bowl
and mix until well blended.
For faster mixing use an electric beater.
Store in an airtight container.
Re-mix well before using.

Gluten Free Plain Flour Mix 5
2 Measures Sweet Rice Flour
1 & 1/2 Measures Potato Starch
1 Measure Tapioca Starch
1/3 Measure Potato Flour
Place all the ingredients in a large mixing bowl.
Mix until well blended.
For faster mixing use an electric beater..
Store in an airtight container.
Re-mix well before using.

Gluten Free Self-Raising Flour
1/4 cup Potato Flour
plus
enough White Rice Flour to make it up to 300g/11oz
1 tsp Bicarbonate of Soda
1 tsp Cream of Tartar
1 teasp Xanthan Gum or Guar Gum
Mix all ingredients together in a large mixing bowl.
Store in an airtight container until ready to use.
Re-mix well before using.

Faery Fluff's Gluten free flour
2 cups rice flour
2/3 cup potato *starch* flour (not potato flour)
1/3 cup tapioca flour
Can be used in muffins,cookies, quick breads.
