if you take a small handful of the mixture and form it into a ball and it holds together, you can bake it.
If not, add a little bit of (dry) mashed potato flakes and try forming again.
Put balls of your falafel mixture into a well-greased pan, leaving room between them.
Spray them all over with oil. Pan-spray works too.
Bake at about 400 F until browned on the outside and not too dry inside.
Serve however and with whatever you like.
I recommend in pita bread with lettuce, tomato, cucumber, and tahini sauce. And hot sauce!
