Put SOAKED beans into any pot until half-full. Add water or broth to cover the beans, plus 2" more. Bring to boil. Boil 10 - 15 minutes. Turn heat to medium simmer (slight bubbling). Cook, covered, until beans are tender (can take anywhere from 1 hour to 3 hours, depending on type, age, and temperament of the beans). Add seasonings when beans are getting close to done. Add salt last.
