You mentioned stainless steel is your favorite for cooking any type of bean. Would you mind saying something more about this?

I went into an upscale cookware store and I told the salesperson I wanted to cook beans. She recommended cast iron so that's what I bought. Perhaps I was misinformed. Again, many thanks!
