You can make a meringue-like topping for pies using Ener-G. It is very delicate, though, and should not be kept for very long. (In other words, eat that pie as soon as you can!) --- Beaten "Egg Whites" Meringue for Pies 1 tsp vegan gelatin (Kojel, etc) 1/4 cup water 2 Tbs Ener-G Egg Replacer (dry) 2 Tbs sugar (omit for non-sweet recipes) 1 tsp vanilla (omit for non-sweet recipes) In a saucepan, mix gelatin and water. Heat, stirring, until dissolved. Let cool to lukewarm. Stir in Ener-G, sugar, and vanilla. Beat until stiff. [For a stiffer meringue, use more gelatin.]
