here is another recipe in which you can
use your green curry paste!

Thai Eggplant Curry
1 - 2 tsp Thai green curry paste (or to taste)
2 & 1/4 cups coconut milk
1 tsp sugar (or other sweetener)
2 cups chopped eggplant (peeled)
1/2 tsp lime juice
1/4 cup fresh basil leaves (or 2 Tbs dried)
1 jalapeno pepper (or other hot pepper), sliced
into rings
In a large saucepan, put coconut milk and curry
paste. Mix well.
Heat to just below boiling.
Mix in sugar. Simmer for 5 minutes, stirring
often.
Stir in eggplant. Raise heat to medium, and cook
for 5 minutes, stirring often.
Mix in lime juice and basil.
Put into serving bowl.
Garnish with sliced pepper, and serve.
Serve over rice or noodles.
