Well I went "nuts" over the Coco-nut Curry!!:) Delicious! I used green and red peppers instead of zucchini since I didn't have any in the house. I used green curry paste which I had bought at the health food store a week or so ago. Then instead of cooking on top of the stove I baked it. That way I could get some other things done around here at the same time! Oh I also used the tofu that had been frozen and I thawed and squeezed the liquid out of it. Great recipe Chef Deb! I am looking forward to the next one you post!
