I recommend you use the mock chicken, at least
the first time. Perhaps, if they are feeling
adventurous, use tofu chicken the next time.

To use frozen/thawed tofu, this is my
recommended method to use tofu in
chicken recipes:
Tofu "Chicken"
Dice thawed (previously frozen) tofu.
Simmer in vegan "chicken" broth
(vegan "chik" bouillon + water)
for 15 - 30 minutes.
Drain, and use in recipes calling for
cooked chicken.
To cook tofu "chicken" ahead, and use it later:
Store the simmered tofu "chicken" in the cooking
broth, in the fridge.
Keeps several days.
