You can try making the batter thinner, and cooking them until done, even turning more than once, if necessary. --- Another idea is to make oven pancakes, cooking the batter in muffin tins, or in a cake pan. Not only do they cook better, but it is a lot easier than stovetop pancakes. --- Also, try adding some applesauce to the batter. 1 or 2 Tablespoons per batch.
