Subject:         Coconut Curry

Coconut Curry

1 Tbs oil
1 medium onion, peeled and chopped
1 tsp mild curry powder
1 tsp crushed garlic
1 cup chopped broccoli or cauliflower
1 medium carrot, diced
1 medium zucchini, diced
1 large potato, cooked, peeled, and diced
1 cup coconut milk
1/4 lb Tofu, diced (optional)
1/2 tsp salt

In a large frying pan, heat oil.
Add onion, and saute` until golden.
Add garlic and remaining vegetables.
Continue to saute` for 5 minutes, or until vegetables are
tender.
Stir in coconut milk, Tofu (if desired), and salt.
Heat until hot.
Serve with rice.
